Spicy Pepper Jack Queso

Hey Yall!

So my favorite thing about summer in the South is all the fun you can have in the sun. There are countless activities (boating, paddle boarding, pool, lake) that have kept me in the sun as much as possible and I couldn’t be happier. When most of my day is spent out and about this time of year, I want to cook a quick, no stress meal when I get home. Thought I’d share with y’all my go-to anytime meal that’s essentially a Spicy Queso that could be eaten alone, with pasta, rice, chicken, shrimp.. the possibilities are endless!

Ingredients

1/2 box of pasta (or 2 servings of rice)

35 pealed shrimp (or 2 servings of boiled shredded chicken)

1 can of Rotel Original (or Hot if you prefer a really spicy dish)

2 wedges of Laughing Cow Pepper Jack Cheese

Time 

15 minutes

Instructions 

Start cooking your pasta or rice since that will take the longest to cook. If you decide to use chicken in this meal, start that first and boil for about an hour. As your pasta cooks, start heating a small pot on medium heat with your Rotel and cheese wedges. Continue to stir it as it heats and melts the cheese. Right before your pasta is complete, bring to boil a small pot of water for your shrimp. Once the water is boiling add your shrimp and set your timer for 3 minutes. When the timer goes off, drain the shrimp and add them to your Rotel and Cheese. Drain your pasta and combine. Enjoy!
